Coconut Chicken

Happy Saturday everyone! So recently I’ve been completely obsessed with coconut. Literally coconut everything from coconut milk to coconut flakes to coconut oil, to even coconut candles… I have to have it. Last night I was feeling creative in the kitchen and came up with this coconut chicken recipe!  This chicken is SO yummy. It tastes so good with steamed broccoli or any type of veggies. Time: 40 minutes

Servings: 3

Ingredients:

  • 3 chicken breasts
  • 1 cup of unsweetened coconut flakes (the brand I use is pictured below)
  • 1 tablespoon of coconut oil
  • 1 tablespoon of ghee

Instructions:

  1. If chicken is frozen, refrigerate or leave out until completely thawed.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. Heat coconut oil in microwave for 30 seconds then coat a medium sized pan with the coconut oil.
  4. Blend coconut shavings in a blender (I use a nutribullet) for 30 seconds or until fine.
  5. Heat ghee in the microwave for 30 seconds or until liquid.
  6. Lightly coat chicken with ghee.
  7. Rub coconut on chicken until chicken is completely coated. Put chicken on the medium sized pan.
  8. Bake chicken in the oven for about 30 minutes at 350 degrees Fahrenheit.
  9. Remove chicken from pan.
  10. Enjoy!

Spicy Parmesan Voodles

This recipe is one of my absolute favorites! It is super quick and easy to make and SO tasty. Right now I am so obsessed with voodles (veggie noodles), especially zoodles (zucchini noodles); I make them at least twice a week, if not more. For this recipe, I recommend zoodles, but butternut squash noodles taste just as good (I used butternut squash for the dish in the picture, which is why it’s orange lol). Hope you guys love this dish as much as I do!

Serves: 1

Time: 10 minutes

Ingredients: 

  • 2 zucchini, 1 butternut squash, or store bought voodles (or whatever veggie you want to make your voodles out of. If I buy pre-spiralized, I usually buy the Veggie Noodle Co. brand)
  • 1/2 cup of spinach
  • 1 tablespoon of coconut oil
  • 1/4 cup of grated parmesan
  • 1 teaspoon of minced garlic
  • crushed red pepper flakes
  • salt and pepper

Instructions: 

  1. If you did not but pre-spiralized voodles, spiralize your vegetables.
  2. Heat a medium sized pan and add the coconut oil. Heat on medium until coconut oil is completely melted.
  3. Add garlic and voodles to the pan and sauté at medium heat for about 4-5 minutes.
  4. Add spinach and sauté for about 1-2 more minutes.
  5. Add red pepper flakes and parmesan.
  6. Season to taste with salt and pepper.
  7. Enjoy!
